The perfect summer breakfast for oatmeal lovers like myself!
I think it's well known by now that oatmeal is one of the best breakfast options out there. Not only is it filling and tasty, but it's also very versatile and can be made in numerous of ways. Oatmeal has been my favourite breakfast for a long time. And at one point in time, it was the meal/snack I turned to after returning home from a night out on the town... no Macca's for me, all I wanted was my oats!
Oats contain a specific type of fibre call beta-glucans which are known to enhance our bodies immune system's ability to fight infection, produce much lower rises in blood sugar levels and increase the growth of good bacteria in the digestive tract. One other special thing about oats is that they contain antioxidant compounds called avenanthramides which aid in reducing itching, irritation and inflammation (ever wondered why oat soaps and face masks are so popular?! Just image the work they're doing to your insides once digested!!).
Like many other grains, soaking oats makes them easier to digest and more nutritious. Lately I've been loving soaked oats for breakfast as it's nice and refreshing on these hot summers days we're currently having in Melbourne. Below is my current favourite recipe. The fruits can be substituted with any of your favourite fruits, fresh or frozen. Same with the seeds and choice of plant milk!
RECIPE
INGREDIENTS:
3/4 cup rolled oats
1/2 cup unsweetened almond milk
1/2 cup water (or more milk)
1 tbsp chia seeds
1 tbsp vanilla protein powder (optional)
1 small chopped apple
Frozen (or fresh) blueberries
1 tbsp hemp seeds
1 tbsp pumkin seeds
METHOD:
In a container, combine the oats, milk/water, chia seeds, protein powder & apple and stir well to combine.
Add blueberries to the top of the mixture.
Top with hemp & pumpkin seeds.
Seal the lid and place in the fridge overnight.
In the morning, stir the mixture well until the seeds and blueberries are combined.
